S'more's Ice Cream Sandwiches

Is it to hot to sit around a camp fire roasting a marshmallow, but you still want S'mores? This is the recipe for you. S'mores Ice Cream Sandwiches, The perfect indoor camping food.. What's indoor camping you asked it is when you planned to have camp quarantine in the back yard and it decides to rain, a lot. The back yard campsite we had envisioned was ankle deep in muddy puddles. Change of plans, let's make the most of it. A virtual camp fire with our scout friends via Zoom and a night of sleeping in a tent set up in the living room.

1) First Let's make the Ice Cream.

2) Pour mix into silicon molds. (I used cup cake/muffin molds but you could experiment with any shape)

Cover with foil and freeze until solid.

3) Pop out the frozen ice cream disks and place it on a gram cracker. Squirt on some Chocolate syrup. Then Put another gram cracker on top.

4) Serve now or wrap the s'mores in foil and then put in the freezer for later.
