How to make Plant Based Coconut Ice Cream (Vegan, Dairy Free)

My family and I love ice cream! It is hard to find a plant based vegan ice cream that doesn't have high fructose corn syrup and a long list of ingredients I can't recognize that is also delicious and affordable. That is until I learned to make delicious plant based coconut ice cream made easy in just 3 easy steps.

What you will need-

1 can of coconut milk

1 can of coconut cream

1 cup of sugar

1tbs of vanilla extract

1) Just pour all the the ingredients into your blender. I used the ice cream feature on my Foodie Cold and Hot Blender but I have been told you can blend for 2 minutes on high on any high speed blender. This makes enough for1 quart.

2) Once it is blended you can pour the ice cream mixture into freezer proof ice cream containers. I use these these containers and they work really well.

3) Next you just freeze and wait. In about 5 hours your ice cream is ready!

I've also used Ice Pop Molds which is perfect for the kids and for portion control!

Now that you know the basic recipe let's talk flavors.

-Blend any frozen or canned fruit. (Strawberry, pineapple, peach, cherry, ect)

-Chocolate fan? Just add 2-3 heaping table spoons of cocoa powder.

-Add a tbsp of extract. Mint for mint chocolate chip is a family favorite.

- Add some seasoning. Pumpkin Spice, nutmeg, ginger, ect. Cinnamon taste great in both vanilla and chocolate bases.

- Add maple, caramel, or chocolate syrup.

- Add peanut butter powder

-Use a different kind of sugar or sweetener

Don't forget all the things you can add on top of your ice cream.

- Pecans, peanuts, walnuts, ect.

- Chocolate chips, M&M's, or other candies.

- Frosted flakes or any cereal of your choice.
